Zucchini Banana Bread
This recipe is adapted from my step mom's grandmother's recipe. I have the original recipe, which is Chocolate Zucchini Bread, but I can't share. I think the Grandmother would rise and have a chat with me. I'll have to noodle on that prospect for awhile to see if it's worth the risk. Anyway....here is my version of Zucchini Banana Bread.This makes 2 loaves!! Grease loaf pans...sides too! Preheat oven to 325 degrees.
Mix these ingredients in a large bowl:
3 Eggs
3/4 cup Oil
2/3 cup Brown Sugar, packed
1/2 cup Sugar
2 tsps Vanilla
2 cups grated zucchini
3 ripe bananas, mushed up good!
Mix these ingredients in a medium bowl:
3-1/2 cups Flour
1/4 cup Cocoa - yes, must have chocolate whenever, wherever possible!
1 tbsp Cinnamon
1/2 tsp Nutmeg
1/2 tsp Ginger
1 tsp Salt
1-1/2 tsp Baking Powder
1 tsp Baking Soda
Pour the dry ingredients into the wet ingredients. Mix just until blended. Pour into greased pans. Bake at 325 degrees (preheated) for about 50 minutes. Then start testing with a toothpick in the middle - it should come out clean. Cool on racks (see pic) and then share with friends and family....or hide them in your room. They also freeze really well. Thanks!
